Ingredients

For the Chicken

  • 1.5 pounds boneless skinless chicken thighs trimmed of excess fat

For the Sauce

  • 1/2 cup honey preferably raw or local
  • 1/4 cup soy sauce low sodium recommended
  • 2 tablespoons rice vinegar adds acidity
  • 4 cloves garlic minced
  • 1 teaspoon ground ginger or 1 tablespoon fresh ginger, minced
  • 1 teaspoon sesame oil for added flavor

For the Vegetables

  • 2 cups broccoli florets fresh or frozen
  • 1 cup carrots sliced
  • 1 cup bell pepper sliced, any color
  • 1 cup snap peas fresh or frozen

For Garnish

  • 2 tablespoons green onions sliced, for garnish
  • 1 tablespoon sesame seeds toasted, for garnish

Instructions

Prepare the Chicken

  • Place the trimmed chicken thighs in the bottom of the slow cooker. This allows the chicken to cook evenly and absorb the flavors of the sauce.

Make the Sauce

  • In a medium bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, ground ginger, and sesame oil until well combined. This mixture will create a sweet and savory glaze that enhances the chicken's flavor.
  • Pour the sauce over the chicken in the slow cooker, ensuring that all pieces are well coated.

Add the Vegetables

  • Layer the broccoli, carrots, bell pepper, and snap peas on top of the chicken and sauce. This method allows the vegetables to steam while the chicken cooks, preserving their color and nutrients.

Cook the Dish

  • Cover the slow cooker with its lid and cook on low for 6 hours or on high for 3 hours. Cooking on low allows the chicken to become tender and juicy.
  • Check for doneness; the chicken should reach an internal temperature of 165°F (75°C) and be easily shredded with a fork.

Serve

  • Once cooked, carefully remove the chicken and vegetables from the slow cooker. Serve on a plate, drizzling extra sauce from the slow cooker over the top.
  • Garnish with sliced green onions and toasted sesame seeds for added flavor and presentation.

Notes

This dish can be served over rice or noodles for a complete meal. For a spicier kick, add red pepper flakes to the sauce.
