Ingredients

For the Muffins

  • 3 medium ripe bananas mashed
  • 1/3 cup melted butter unsalted
  • 1 large egg room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda fresh
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar
  • 1 1/2 cups all-purpose flour sifted
  • 1/2 cup chocolate chips optional

Instructions

Prepare the Muffin Batter

  • Preheat your oven to 350°F (175°C). This ensures that the muffins will bake evenly and rise properly.
  • In a large mixing bowl, mash the ripe bananas with a fork until smooth. The riper the bananas, the sweeter your muffins will be.
  • Stir in the melted butter until well combined. This adds moisture and richness to the muffins.
  • Add the egg and vanilla extract, mixing until fully incorporated.
  • In a separate bowl, whisk together the baking soda, salt, and granulated sugar.
  • Gradually add the dry ingredients to the banana mixture, folding gently with a rubber spatula until just combined. Be careful not to overmix, as this can lead to dense muffins.
  • If using, fold in the chocolate chips for added sweetness and texture.

Bake the Muffins

  • Line a muffin tin with paper liners or grease it lightly with cooking spray.
  • Spoon the batter into the muffin cups, filling each about 2/3 full. This allows room for the muffins to rise.
  • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean. This indicates that the muffins are fully cooked.
  • Once baked, remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a cooling rack.

Notes

These muffins can be stored in an airtight container at room temperature for up to 3 days or frozen for up to 3 months. To reheat, simply microwave for 15-20 seconds.
