Ingredients

For the Chicken

  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 tsp salt to season chicken
  • 1 tsp black pepper to season chicken
  • 1 tsp garlic powder for flavor

For the Sauce

  • 2 cups marinara sauce store-bought or homemade
  • 1 tsp dried oregano for added flavor
  • 1 tsp dried basil for added flavor

For the Casserole

  • 2 cups cooked pasta penne or rotini works well
  • 2 cups shredded mozzarella cheese for topping
  • 1/2 cup grated Parmesan cheese for topping
  • 1 tbsp olive oil for cooking chicken

Instructions

Prepare the Chicken

  • In a large skillet, heat the olive oil over medium heat. Add the bite-sized chicken pieces, season with salt, pepper, and garlic powder. Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and no longer pink in the center.

Combine the Sauce

  • In a mixing bowl, combine the marinara sauce, dried oregano, and dried basil. Mix well to incorporate the herbs into the sauce.

Assemble the Casserole

  • Preheat your oven to 375°F (190°C). In a 9x13 inch baking dish, layer half of the cooked pasta on the bottom.
  • Spread half of the cooked chicken over the pasta, followed by half of the marinara sauce mixture. Sprinkle with half of the mozzarella cheese.
  • Repeat the layers with the remaining pasta, chicken, marinara sauce, and top with the remaining mozzarella and grated Parmesan cheese.

Bake the Casserole

  • Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

Serve

  • Remove the casserole from the oven and let it sit for 5-10 minutes before serving. This will help the layers set and make it easier to serve.

Notes

Feel free to add vegetables like spinach or bell peppers for added nutrition. You can also use gluten-free pasta for a gluten-free option.
