Ingredients

Zucchini Chips

  • 2 medium zucchini sliced thinly, about 1/8 inch thick
  • 1 tablespoon olive oil extra virgin for best flavor
  • 1 teaspoon sea salt adjust to taste
  • 1/2 teaspoon black pepper freshly ground for better flavor
  • 1/2 teaspoon garlic powder for added flavor
  • 1/2 teaspoon onion powder for added flavor
  • 1/4 cup parmesan cheese grated, optional for a cheesy flavor

Instructions

Prepare the Zucchini

  • Wash the zucchini thoroughly under running water to remove any dirt or pesticides.
  • Using a mandoline slicer or a sharp knife, slice the zucchini into thin rounds, about 1/8 inch thick. This ensures they cook evenly and become crispy.
  • Place the zucchini slices in a mixing bowl.

Season the Zucchini

  • Drizzle the olive oil over the zucchini slices. Toss gently to coat all the slices evenly. This helps the seasonings stick and promotes crispiness.
  • Sprinkle the sea salt, black pepper, garlic powder, onion powder, and grated parmesan cheese (if using) over the zucchini. Toss again until all slices are well coated.

Air Fry the Zucchini Chips

  • Preheat your air fryer to 375°F (190°C) for about 5 minutes. Preheating helps achieve a crispy texture.
  • Arrange the seasoned zucchini slices in a single layer in the air fryer basket. Avoid overcrowding to ensure even cooking.
  • Cook the zucchini chips at 375°F (190°C) for 10-15 minutes, shaking the basket halfway through to promote even crisping. Keep an eye on them towards the end to prevent burning.
  • Once they are golden brown and crispy, remove them from the air fryer and let them cool slightly before serving. They will continue to crisp up as they cool.

Notes

For extra flavor, feel free to experiment with different seasonings such as paprika, cayenne pepper, or Italian herbs. Store any leftovers in an airtight container, but note that they are best enjoyed fresh.
