  • 3 medium zucchinis (about 600g), sliced into thin rounds
  • 200g feta cheese, crumbled
  • 2 tbsp extra virgin olive oil
  • 3 garlic cloves, minced
  • 1 tsp fresh basil or parsley, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine sliced zucchini with minced garlic, olive oil, salt, pepper, and half of the crumbled feta cheese. Toss until well coated.
  3. Transfer the mixture to a greased baking dish and spread it evenly. Top with the remaining feta cheese.
  4. Bake for 25-30 minutes until the zucchini is tender and the top is golden brown.
  5. Remove from oven and garnish with fresh herbs before serving.
