Perfect for breakfast, brunch, or a late-night snack, these bagels are not only scrumptious but also incredibly easy to make. With their vibrant green specks and savory flavor profile, they’re sure to impress anyone who takes a bite. Enjoy them fresh from the oven or toasted with your favorite spreads!

Ingredients

Scale
  • 2 medium zucchinis (about 300g)
  • 1 ½ cups all-purpose flour (180g)
  • 2 tsp active dry yeast (6g)
  • ½ tsp salt
  • 2 large eggs
  • 1 tsp garlic powder
  • 2 tbsp poppy seeds or sesame seeds

Instructions

  1. Grate the zucchinis and drain excess moisture using a clean kitchen towel.
  2. In a large bowl, mix the flour, yeast, salt, and garlic powder until combined.
  3. Create a well in the center; add eggs and drained zucchini. Mix until a shaggy dough forms.
  4. Knead on a floured surface for about 5 minutes until smooth and elastic.
  5. Divide into 6-8 portions, shape into balls, and poke holes in the center to form bagels.
  6. Preheat oven to 375°F (190°C). Place on parchment-lined baking sheet, brush with egg wash if desired, sprinkle with seeds, and bake for 20-25 minutes until golden brown.
