- 1 lb Yukon Gold potatoes
- 2 medium fresh oranges, segmented
- 1/2 cup finely chopped red onion
- 1/4 cup chopped fresh parsley
- 3 tbsp olive oil
- 2 tbsp apple cider vinegar
- Salt & pepper to taste
Instructions
- Wash the Yukon Gold potatoes and scrub until clean.
- Cut the potatoes into bite-sized cubes.
- Boil the potato cubes in salted water for 10–12 minutes until tender but firm. Drain and let cool slightly.
- In a small bowl, whisk together olive oil, apple cider vinegar, salt, and pepper for the dressing.
- In a large bowl, combine cooled potatoes with orange segments, red onion, and parsley. Pour dressing over the salad and toss gently.
- Chill in the refrigerator for at least one hour before serving.
