- 1/2 cup fresh cilantro, chopped
- 1/4 cup freshly squeezed lime juice (about 2–3 limes)
- 4 garlic cloves, minced
- 3 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp cumin powder
- 1/2 tsp red pepper flakes (optional)
Instructions
- Prepare the marinade by mixing lime juice, minced garlic, chopped cilantro, olive oil, salt, black pepper, cumin powder, and red pepper flakes in a bowl.
- Marinate the chicken thighs in the mixture for at least 30 minutes at room temperature or up to 4 hours in the refrigerator.
- Preheat your grill or oven to medium-high heat (375°F / 190°C).
- Grill or roast the chicken thighs skin-side down for about 7-10 minutes until golden brown.
- Flip the chicken and cook until the internal temperature reaches 165°F (75°C), approximately another 15 minutes.
- Let the chicken rest for 5 minutes before serving with lime wedges and additional cilantro.
