  • 4 medium carrots, chopped
  • 3 medium Yukon Gold potatoes, diced
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 1 cup red wine (such as Cabernet Sauvignon)
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Chop vegetables into hearty chunks and set aside.
  2. Heat olive oil in a large pot over medium-high heat. Season beef with salt and pepper; sear until browned on all sides (5-7 minutes).
  3. Add onions and garlic; sauté until onions are translucent.
  4. Stir in carrots and potatoes.
  5. Pour in beef broth and red wine, scraping any bits off the bottom.
  6. Add thyme and bay leaves; stir well and bring to a simmer.
  7. Cover and simmer on low heat for 2-3 hours until the beef is tender.
