Description

Winter Farro & Kale Salad is a warm, nourishing dish that combines nutty farro with vibrant kale and a colorful array of vegetables. Ingredients

  • 1 cup farro
  • 4 cups fresh kale leaves (stems removed)
  • 1 cup cherry tomatoes (halved)
  • ½ English cucumber (diced)
  • ¼ red onion (thinly sliced)
  • ½ cup feta cheese (crumbled)
  • â…“ cup pine nuts (toasted)
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Rinse 1 cup of farro under cold water. In a pot, combine with 3 cups of water, bring to a boil, reduce heat, cover, and simmer for 25-30 minutes until tender.
  2. Chop kale into bite-sized pieces and massage gently in a bowl for about 2 minutes until wilted.
  3. Add halved cherry tomatoes and diced cucumber to the bowl with kale along with sliced red onion.
  4. Whisk together olive oil, balsamic vinegar, salt, and pepper in a small bowl.
  5. Once farro is cooked and slightly cooled, add it to the mixing bowl with cheese and pine nuts. Drizzle dressing over the top.
  6. Mix everything gently until well combined. Adjust seasoning as needed before serving.
