- 4 cups fresh kale leaves (stems removed)
- 1 cup cherry tomatoes (halved)
- ½ English cucumber (diced)
- ¼ red onion (thinly sliced)
- ½ cup feta cheese (crumbled)

- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Rinse 1 cup of farro under cold water. In a pot, combine with 3 cups of water, bring to a boil, reduce heat, cover, and simmer for 25-30 minutes until tender.
- Chop kale into bite-sized pieces and massage gently in a bowl for about 2 minutes until wilted.
- Add halved cherry tomatoes and diced cucumber to the bowl with kale along with sliced red onion.
- Whisk together olive oil, balsamic vinegar, salt, and pepper in a small bowl.
- Once farro is cooked and slightly cooled, add it to the mixing bowl with cheese and pine nuts. Drizzle dressing over the top.
- Mix everything gently until well combined. Adjust seasoning as needed before serving.
