  • 1 cup bell peppers (chopped, mix of red and green)
  • 1 medium sweet onion (chopped)
  • 4 large eggs
  • 4 whole wheat English muffins
  • 2 cups fresh spinach
  • ½ cup shredded cheddar or feta cheese

Instructions

  1. Sauté chopped onion and bell peppers in olive oil over medium heat until soft (about 5 minutes).
  2. Add ground turkey, season with salt and pepper, and cook until browned through (about 8 minutes).
  3. Whisk eggs in a bowl and pour into the turkey-veggie mixture, cooking until scrambled (about 3 minutes).
  4. Fold in spinach and let wilt for about a minute.
  5. Toast whole wheat English muffins until golden brown.
