Description

Vegetable Stir Fry is a vibrant, quick-cooking dish that transforms fresh vegetables into a colorful medley bursting with flavor.


Ingredients

  • 2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas)
  • 2 cloves fresh garlic, minced
  • 1 inch fresh ginger, grated
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp vegetable broth
  • 1 tbsp sesame oil
  • 1 tsp cornstarch mixed with 2 tsp water

Instructions

  1. Wash and chop mixed vegetables into bite-sized pieces.
  2. In a small bowl, whisk together soy sauce, vegetable broth, garlic, ginger, and cornstarch mixture.
  3. Heat sesame oil in a large wok over medium-high heat until shimmering.
  4. Add mixed vegetables and stir-fry for 3-5 minutes until bright and tender-crisp.
  5. Pour in the prepared sauce and cook for another minute until everything is coated.
  6. Serve immediately, drizzling any remaining sauce on top.
