- 8 oz tempeh, sliced into thin strips
- 4 slices whole grain or sourdough bread
- 1 cup ripe tomatoes, sliced
- 1 cup romaine or butter lettuce, washed and dried
- 3 tbsp vegan mayo
- 1 tsp smoked paprika
- 2 tbsp soy sauce
- 1 tbsp maple syrup
- Oil for cooking
Instructions
- 1. Marinate the tempeh by mixing soy sauce, maple syrup, and smoked paprika in a bowl. Brush onto tempeh strips and let sit for at least 15 minutes.
- 2. Heat oil in a non-stick pan over medium heat. Cook marinated tempeh for about 5 minutes on each side until golden brown.
- 3. While the tempeh cooks, toast the slices of bread until golden.
- 4. In another bowl, combine vegan mayo with remaining smoked paprika and a pinch of salt.
- 5. Spread sauce on one side of each slice of toasted bread. Layer with lettuce, tomatoes, and tempeh before topping with another slice of bread.
