  • 8 oz tempeh, sliced into thin strips
  • 4 slices whole grain or sourdough bread
  • 1 cup ripe tomatoes, sliced
  • 1 cup romaine or butter lettuce, washed and dried
  • 3 tbsp vegan mayo
  • 1 tsp smoked paprika
  • 2 tbsp soy sauce
  • 1 tbsp maple syrup
  • Oil for cooking

Instructions

  1. 1. Marinate the tempeh by mixing soy sauce, maple syrup, and smoked paprika in a bowl. Brush onto tempeh strips and let sit for at least 15 minutes.
  2. 2. Heat oil in a non-stick pan over medium heat. Cook marinated tempeh for about 5 minutes on each side until golden brown.
  3. 3. While the tempeh cooks, toast the slices of bread until golden.
  4. 4. In another bowl, combine vegan mayo with remaining smoked paprika and a pinch of salt.
  5. 5. Spread sauce on one side of each slice of toasted bread. Layer with lettuce, tomatoes, and tempeh before topping with another slice of bread.
  6. 6. Cut diagonally and serve immediately.
