  • 4 medium sweet potatoes (about 1.5 lbs)
  • 1 lb lean ground turkey
  • 2 tbsp taco seasoning
  • 1 can (15 oz) black beans, rinsed
  • 1 cup shredded cheese (cheddar or your choice)
  • ¼ cup fresh cilantro, chopped
  • ½ cup sour cream or Greek yogurt for serving

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Poke sweet potatoes several times with a fork, place on the baking sheet, and bake for 45 minutes until tender.
  3. In a skillet over medium heat, brown the ground turkey (5-7 minutes). Add taco seasoning and black beans; stir and let simmer for 5 minutes.
  4. Once sweet potatoes are cool enough to handle, slice them open lengthwise and fluff the insides.
  5. Stuff each potato with the turkey mixture, top with cheese, and broil for 2-3 minutes until melted.
