  • 1 lb ground turkey
  • 1 cup canned pumpkin puree
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 can (15 oz) black or kidney beans, drained and rinsed
  • 2 tsp cumin
  • 2 tsp chili powder
  • ½ tsp cinnamon
  • 1 cup cream (heavy or coconut)
  • 1 cup bell peppers, diced
  • Salt & pepper to taste

Instructions

  1. In a large pot over medium heat, add olive oil and sauté chopped onions and minced garlic until fragrant.
  2. Stir in ground turkey, breaking it up with a spoon; cook until browned (about 5-7 minutes).
  3. Add diced bell peppers, cumin, chili powder, cinnamon, salt, and pepper; sauté until peppers soften slightly.
  4. Mix in the canned pumpkin puree and drained beans; stir until well combined.
  5. Gradually add chicken broth while stirring; bring to a simmer and cook uncovered for 20-25 minutes.
  6. Just before serving, stir in cream for extra richness. Taste and adjust seasoning as needed.
