Ingredients

  • 1 block (14 oz) firm tofu
  • 1 tsp turmeric
  • 1 cup bell peppers (chopped, any color)
  • 2 cups fresh spinach (roughly chopped)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 2 tbsp low-sodium soy sauce
  • 1 tsp smoked paprika
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Drain the tofu and press between paper towels to remove excess moisture. Crumble into bite-sized pieces.
  2. Heat olive oil in a large skillet over medium heat. Sauté onions for about 3 minutes until translucent.
  3. Add bell peppers and cook for another 3 minutes until just tender.
  4. Stir in crumbled tofu along with turmeric, smoked paprika, soy sauce, salt, and pepper. Cook for 5-7 minutes while stirring occasionally.
  5. Fold in spinach during the last couple of minutes until wilted.
  6. Taste and adjust seasoning as needed before serving hot.
