Ingredients

  • ½ cup dried cranberries (75g)
  • ½ cup crumbled feta cheese (75g)
  • 3 tbsp extra virgin olive oil (45ml)
  • 2 tbsp freshly squeezed lemon juice (30ml)
  • 1 tbsp honey (21g)
  • ¼ cup sunflower seeds (35g)

Instructions

  1. Wash and dry the kale thoroughly. Remove tough stems and tear leaves into bite-sized pieces.
  2. In a small bowl, whisk together olive oil, lemon juice, and honey until well combined.
  3. In a large mixing bowl, toss kale leaves with dried cranberries and crumbled feta cheese.
  4. Pour the dressing over the salad and toss until everything is evenly coated.
