- 1 lb lean ground beef or turkey
- 1 packet (1 oz) taco seasoning
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup frozen or canned corn, drained
- 1 cup shredded cheddar cheese
- ½ cup sour cream for topping (optional)
Instructions
- Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
- Cut the tops off the bell peppers and remove the seeds. Place them upright in the baking dish.
- In a skillet over medium heat, brown the ground meat until fully cooked (5-7 minutes). Drain excess fat.
- Stir in taco seasoning, black beans, and corn; simmer for 3-5 minutes until heated through.
- Fill each pepper generously with the mixture and top with shredded cheese.
- Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly.
