  • 8 oz rotini pasta
  • 1 lb lean ground beef
  • 2 tbsp taco seasoning
  • 1 medium yellow onion, diced
  • 1 cup bell peppers (mixed colors), diced
  • 1 cup shredded sharp cheddar cheese
  • 1 cup heavy cream
  • ¼ cup fresh cilantro, chopped
  • ½ cup cherry tomatoes, halved

Instructions

  1. Cook the pasta in salted boiling water for 8-10 minutes until al dente. Drain and set aside.
  2. In a large skillet over medium heat, sauté diced onion and bell peppers in olive oil until softened.
  3. Move veggies aside and add ground beef; cook until browned (5-7 minutes).
