- 2 medium sweet potatoes (peeled and diced)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 cup panko breadcrumbs (divided)
- 2 tbsp fresh parsley (chopped, for garnish)
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Boil diced sweet potatoes in salted water until fork-tender (about 10-15 minutes). Drain and mash.
- In a large bowl, combine mashed sweet potatoes, diced chicken, garlic powder, onion powder, salt, pepper, and half of the panko.
- Form small balls from the mixture and roll in remaining panko breadcrumbs.
- Place on a greased baking sheet, drizzle with olive oil, and bake for 20-25 minutes or until golden brown.
- Let cool slightly before serving; garnish with fresh parsley.
