  • 2 medium sweet potatoes, about 1 lb (450g)
  • 1 can (15 oz/425g) black beans, rinsed and drained
  • 2 chipotle peppers in adobo sauce, minced
  • 1 cup breadcrumbs (gluten-free if needed)
  • 1 large egg or 1 flax egg (for vegan option)
  • ¼ cup fresh cilantro, finely chopped
  • Salt and pepper to taste
  • Burger buns (whole grain or gluten-free) for serving
  • Lettuce and tomato for toppings

Instructions

  1. Preheat oven to 400°F (200°C). Poke holes in sweet potatoes and roast on a lined baking sheet for about 45 minutes until soft.
  2. Let cool slightly, then mash half of the black beans in a bowl.
  3. Add roasted sweet potatoes (peeled), remaining whole black beans, cilantro, breadcrumbs, beaten egg or flax egg, and chipotle peppers. Mix until combined.
  4. Form mixture into six patties.
  5. Heat oil in a skillet over medium heat; cook patties for about 5 minutes on each side until golden brown.
  6. Serve on buns with lettuce and tomato.
