- 2 medium sweet potatoes, about 1 lb (450g)
- 1 can (15 oz/425g) black beans, rinsed and drained
- 2 chipotle peppers in adobo sauce, minced
- 1 cup breadcrumbs (gluten-free if needed)
- 1 large egg or 1 flax egg (for vegan option)
- ¼ cup fresh cilantro, finely chopped
- Salt and pepper to taste
- Burger buns (whole grain or gluten-free) for serving
- Lettuce and tomato for toppings
Instructions
- Preheat oven to 400°F (200°C). Poke holes in sweet potatoes and roast on a lined baking sheet for about 45 minutes until soft.
- Let cool slightly, then mash half of the black beans in a bowl.
- Add roasted sweet potatoes (peeled), remaining whole black beans, cilantro, breadcrumbs, beaten egg or flax egg, and chipotle peppers. Mix until combined.
- Form mixture into six patties.
- Heat oil in a skillet over medium heat; cook patties for about 5 minutes on each side until golden brown.
- Serve on buns with lettuce and tomato.
