Instructions
- In a large pot over medium heat, add olive oil. Once hot, sauté the chopped onion until translucent (about 5 minutes).
- Stir in minced garlic and grated ginger; cook for another minute until fragrant.
- Add the chopped carrots and stir well. Cook for about 5 minutes.
- Pour in the broth, bring to a boil, then reduce heat to simmer for 20 minutes or until carrots are tender.
- Remove from heat and blend until smooth using an immersion blender or a regular blender.
- Return to heat, stir in coconut milk, season with salt and pepper, and simmer for another 5 minutes before serving.
