Ingredients

  • 4 cups carrots, peeled and chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 thumb-sized piece of fresh ginger, grated
  • 4 cups low-sodium vegetable or chicken broth
  • 1 can (13 oz) coconut milk
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add olive oil. Once hot, sauté the chopped onion until translucent (about 5 minutes).
  2. Stir in minced garlic and grated ginger; cook for another minute until fragrant.
  3. Add the chopped carrots and stir well. Cook for about 5 minutes.
  4. Pour in the broth, bring to a boil, then reduce heat to simmer for 20 minutes or until carrots are tender.
  5. Remove from heat and blend until smooth using an immersion blender or a regular blender.
  6. Return to heat, stir in coconut milk, season with salt and pepper, and simmer for another 5 minutes before serving.
