Ingredients

Scale
  • 1 cup mochiko flour
  • 1/4 cup granulated sugar
  • 3/4 cup water
  • 1 cup fresh strawberries (hulled)
  • 1/4 cup potato starch (for dusting)

Instructions

  1. Prepare your workspace by sprinkling potato starch on a clean flat surface.
  2. In a large bowl, mix mochiko flour, sugar, and water until smooth.
  3. Transfer the mixture to a microwave-safe bowl and cover with plastic wrap. Microwave on high for 1 minute; stir and repeat two more times until sticky and translucent.
  4. Once cool enough to handle, take small pieces of dough and flatten them into circles about three inches wide.
  5. Place a strawberry at the center of each circle, pinch the edges to seal, and roll lightly in potato starch to prevent sticking.
  6. Enjoy immediately or store in an airtight container in the fridge for up to three days.
