  • 1 lb flank or sirloin steak, thinly sliced
  • 3 cups day-old cooked rice
  • 1 cup mixed vegetables (peas, carrots, bell peppers)
  • 3 large eggs, lightly beaten
  • 4 tbsp soy sauce (low-sodium preferred)
  • 4 green onions, chopped
  • 2 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 2 tsp sesame oil
  • 2 tbsp vegetable oil (for cooking)

Instructions

  1. Prep all ingredients: chop veggies, slice steak, and beat eggs.
  2. Heat a large skillet over medium-high heat with vegetable oil. Cook steak until browned (3-4 minutes); remove from pan.
  3. In the same skillet, add garlic and ginger; sauté until fragrant (30 seconds). Add mixed veggies; cook until tender-crisp.
  4. Push veggies aside and scramble eggs in the skillet until fully cooked. Mix with veggies.
  5. Fold in day-old rice and soy sauce; stir thoroughly for even mixing (2-3 minutes).
  6. Add cooked steak and green onions back to the skillet; drizzle with sesame oil before tossing to combine.
