  • 1 large whole wheat tortilla
  • 1 cup fresh baby spinach
  • 1/3 cup crumbled feta cheese
  • 2 large eggs
  • 1/4 cup diced red bell pepper
  • 1 tsp olive oil
  • 1 tsp chopped dill or oregano (optional)
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by washing the spinach and chopping the bell pepper. Crumble the feta cheese if needed.
  2. In a skillet over medium heat, add olive oil. Whisk eggs in a bowl and pour them into the skillet. Scramble until fully cooked; season with salt and pepper.
  3. Remove the eggs from the skillet and sauté the diced red bell pepper and spinach until the spinach wilts.
  4. Combine the scrambled eggs back into the skillet with the vegetables. Sprinkle feta cheese and herbs, stirring gently to combine.
  5. Spoon filling onto one side of the tortilla, fold it over, and toast in the skillet until golden brown on both sides.
