  • 8 sheets phyllo dough
  • 1 lb large shrimp (peeled and deveined)
  • 2 ripe avocados
  • 2 tbsp freshly squeezed lime juice
  • 1 tsp chili powder
  • ¼ cup fresh cilantro (chopped)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper (to taste)

Instructions

  1. Preheat oven to 375°F (190°C). Layer phyllo sheets in muffin tins, brushing each layer with melted butter. Bake for about 10 minutes until golden brown.
  2. In a skillet over medium heat, sauté shrimp with olive oil, chili powder, salt, and pepper until pink and slightly charred (3-4 minutes).
  3. In a bowl, mash avocados and mix in lime juice, cilantro, salt, and pepper until combined.
  4. Spoon avocado mixture into cooled phyllo cups and top with sautéed shrimp.
  5. Return assembled cups to the oven for about 5 minutes to heat through before serving.
