Ingredients

  • 2 cups cooked sushi rice
  • 8 oz sushi-grade salmon fillet, flaked
  • 1/2 cup mayonnaise (preferably Kewpie)
  • 13 tbsp Sriracha sauce (to taste)
  • 2 green onions, finely chopped
  • 2 tbsp low-sodium soy sauce
  • 1 tsp sesame oil

Instructions

  1. Preheat oven to 400°F (200°C) and lightly spray a baking dish with non-stick cooking spray.
  2. In a medium bowl, mix cooked sushi rice with a splash of rice vinegar and a pinch of salt.
  3. In another bowl, combine flaked salmon with mayonnaise and Sriracha until creamy.
  4. Spread seasoned rice at the bottom of the baking dish; layer salmon mixture on top.
  5. Drizzle soy sauce and sesame oil over the salmon; add extra Sriracha if desired.
  6. Bake for 20-25 minutes until golden brown and bubbling.
