  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 cup dry red wine
  • 1 can (28 oz) whole peeled tomatoes
  • 1 cup low-sodium beef broth
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Season short ribs with salt and pepper. In a skillet over medium-high heat, sear the ribs until browned (4–5 minutes per side).
  2. In the same skillet, sauté onions, garlic, carrots, and celery until softened (5–7 minutes).
  3. Add red wine and simmer for 2 minutes, scraping up any brown bits.
  4. Combine canned tomatoes, beef broth, and bay leaves; stir well.
  5. Transfer short ribs to a slow cooker and pour the sauce over them.
  6. Cook on low for 8 hours or high for 4 hours until tender.
  7. Shred the short ribs in the sauce before serving over pasta or polenta.
