  • 1 tbsp sesame oil
  • 2 tbsp cooking oil (for stir-frying)

Instructions

  1. Cook jasmine rice according to package instructions. If using leftover rice, skip this step.
  2. Heat cooking oil in a large skillet or wok over medium-high heat. Sauté minced garlic until fragrant.
  3. Add shrimp and cook until pink and opaque (about 3 minutes). Remove shrimp and set aside.
  4. Stir-fry mixed vegetables in the same pan until tender-crisp.
  5. Return shrimp to the pan with cooked rice, soy sauce, and sesame oil. Mix thoroughly until well combined.
  6. Serve hot, garnished with chopped green onions.
