  • 8 oz lo mein noodles
  • 1 lb medium shrimp, peeled and deveined
  • 1 cup bell peppers (mixed colors), sliced
  • 1 cup carrots, shredded
  • 1 cup broccoli florets
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 3 cloves garlic, minced

Instructions

  1. Cook the lo mein noodles according to package directions until al dente. Drain and set aside.
  2. In a large skillet or wok over medium-high heat, add a splash of vegetable oil. Stir-fry the bell peppers, carrots, and broccoli for about 3 minutes until tender-crisp.
  3. Push the veggies to one side of the pan and add shrimp to the other side. Cook for about 3-5 minutes until shrimp are pink and opaque.
  4. Add the lo mein noodles back into the pan along with garlic, soy sauce, and sesame oil. Toss everything together until evenly coated.
  5. Taste and adjust seasoning if necessary. Serve hot, garnished with green onions or sesame seeds.
