  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 1 large yellow onion
  • 2 tbsp olive oil
  • 2 tbsp fajita seasoning (store-bought or homemade)
  • 8 flour or corn tortillas
  • Juice of 1 lime

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice chicken breasts into strips and chop the bell peppers and onion into thin slices.
  3. In a large bowl, combine chicken, peppers, onion, olive oil, and fajita seasoning. Mix until well coated.
  4. Spread the mixture evenly on a baking sheet.
  5. Bake for 20-25 minutes until chicken reaches an internal temperature of 165°F (75°C) and vegetables are slightly charred.
  6. Squeeze fresh lime juice over the dish before serving.
