- 8 oz fettuccine pasta
- 1 lb Italian sausage (mild or spicy)
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 3 cloves garlic (minced)
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- In a large pot of salted boiling water, cook fettuccine according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.
- In a large skillet over medium heat, add olive oil. Remove sausage from casings and add to the skillet. Cook until browned and cooked through, breaking it apart as it cooks.
- Add minced garlic to the skillet and sauté for 1 minute until fragrant. Pour in heavy cream and bring to a simmer while stirring continuously until slightly thickened.
- Stir in grated Parmesan cheese until melted. If necessary, gradually add reserved pasta water to achieve desired consistency.
- Toss cooked pasta into the skillet with the sausage and sauce, coating all strands evenly.
