  • 8 oz fettuccine pasta
  • 1 lb Italian sausage (mild or spicy)
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic (minced)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot of salted boiling water, cook fettuccine according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.
  2. In a large skillet over medium heat, add olive oil. Remove sausage from casings and add to the skillet. Cook until browned and cooked through, breaking it apart as it cooks.
  3. Add minced garlic to the skillet and sauté for 1 minute until fragrant. Pour in heavy cream and bring to a simmer while stirring continuously until slightly thickened.
  4. Stir in grated Parmesan cheese until melted. If necessary, gradually add reserved pasta water to achieve desired consistency.
  5. Toss cooked pasta into the skillet with the sausage and sauce, coating all strands evenly.
  6. Transfer to plates, adding extra Parmesan on top if desired.
