  • 8 oz fettuccine pasta
  • 2 (6 oz) fresh salmon fillets
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Zest of 1 lemon
  • 2 tbsp olive oil

Instructions

  1. Cook the fettuccine in salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sear salmon fillets skin-side down for 4-5 minutes until crispy. Flip and cook for another 3-4 minutes until fully cooked. Remove and set aside.
  3. In the same skillet, add minced garlic and sauté until fragrant (about 30 seconds). Gradually pour in the heavy cream while stirring continuously.
  4. Stir in grated Parmesan cheese until melted and smooth. Add spinach, allowing it to wilt slightly.
  5. Flake the cooked salmon into bite-sized pieces and mix it into the creamy sauce along with the fettuccine. Toss gently to combine.
  6. Finish by grating fresh lemon zest over the dish before serving.
