  • 12 Medjool dates, pitted
  • 4 oz Boursin cheese (garlic & herbs recommended)
  • ¼ cup unsalted pistachios, chopped
  • 1 tbsp olive oil
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice each date lengthwise without cutting all the way through to create a pocket.
  3. Generously fill each date with Boursin cheese.
  4. Sprinkle chopped pistachios on top of the stuffed dates and gently press them down.
  5. Arrange the stuffed dates on a baking sheet lined with parchment paper and drizzle with olive oil.
  6. Bake for 15 minutes or until golden brown and crispy on top.
  7. Remove from the oven, garnish with fresh parsley, and serve warm.
