  • 1 ½ cups crushed graham crackers
  • ½ cup unsalted butter, melted
  • 8 oz high-quality white chocolate, chopped
  • 12 oz fresh raspberries
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 tsp pure vanilla extract
  • 1 cup heavy cream
  • 3 large eggs

Instructions

  1. Preheat oven to 325°F (160°C). Combine crushed graham crackers and melted butter in a bowl until crumbly. Press into the bottom of a springform pan.
  2. Melt white chocolate in short bursts in the microwave; set aside to cool.
  3. Beat softened cream cheese with sugar and vanilla until creamy. Gradually add eggs, mixing one at a time until fully incorporated.
  4. Gently fold in whipped heavy cream and cooled white chocolate into the mixture.
  5. Puree half of the raspberries with some sugar; layer half of the cheesecake filling into the pan, drizzle raspberry puree over it, then add remaining filling.
  6. Bake for about 50-60 minutes until slightly jiggly in the center. Cool in the oven for an hour before refrigerating for at least four hours or overnight.
