Instructions
- Boil the eggs in a pot covered with cold water. Bring to a gentle boil over medium heat. Cover and remove from heat; let sit for 12 minutes. Cool under cold water.
- Once cooled, peel the eggs and slice them in half lengthwise; scoop out yolks into a mixing bowl.
- Mix yolks with mayonnaise, Dijon mustard, salt, and pepper until smooth.
- Stir in bacon bits and red bell pepper; add blue cheese crumbles if desired.
- Spoon or pipe the mixture back into the egg whites. Garnish with chopped chives.
- Serve immediately or refrigerate until ready to serve.
