  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 2 tbsp red food coloring (gel)
  • 1 tsp vanilla extract
  • 8 oz cream cheese (softened)
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a bundt pan.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, mix granulated sugar and vegetable oil until combined. Add eggs one at a time, then mix in buttermilk and vanilla until smooth.
  4. Gradually add the dry mixture to the wet ingredients until just combined. Stir in red food coloring until desired shade is reached.
  5. In another bowl, beat softened cream cheese with powdered sugar until smooth.
  6. Pour half of the red velvet batter into the bundt pan; dollop cream cheese mixture on top, then add remaining batter. Swirl gently with a knife.
  7. Bake for 50-60 minutes or until a toothpick comes out clean from the cake portion.
  8. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
