Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 4 cups fresh kale, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup freshly squeezed lemon juice
  • 1/3 cup extra virgin olive oil
  • Salt and pepper to taste
  • 1/2 cup feta cheese (optional)

Instructions

  1. Rinse quinoa under cold water in a fine mesh strainer to remove bitterness.
  2. In a medium saucepan, combine rinsed quinoa and water. Bring to a boil over medium heat, then cover and simmer on low for 15 minutes until fluffy.
  3. While quinoa cooks, place chopped kale in a large bowl. Add cherry tomatoes, cucumber, red onion, and feta if desired.
  4. In a small bowl or jar, whisk together lemon juice, olive oil, salt, and pepper.
  5. Fluff cooked quinoa with a fork once cooled slightly and add it to the vegetable mixture. Pour dressing over salad and toss well.
  6. Let sit for at least 10 minutes before serving chilled or at room temperature.
