Instructions
- Rinse quinoa under cold water in a fine mesh strainer to remove bitterness.
- In a medium saucepan, combine rinsed quinoa and water. Bring to a boil over medium heat, then cover and simmer on low for 15 minutes until fluffy.
- While quinoa cooks, place chopped kale in a large bowl. Add cherry tomatoes, cucumber, red onion, and feta if desired.
