  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs (room temperature)
  • 1/2 cup unsalted butter (melted)
  • 8 oz cream cheese (softened)
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In one bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix pumpkin puree, granulated sugar, brown sugar, and melted butter until smooth.
  4. Beat in eggs until fluffy.
  5. Gradually fold dry ingredients into wet mixture until just combined.
  6. Drop batter onto prepared sheets using a cookie scoop, spacing them about 2 inches apart.
  7. Bake for 12–15 minutes or until springy but set on top.
  8. Cool completely before spreading cream cheese filling between two cookies.
