  • 1 cup pumpkin puree (canned or homemade)

  • 4 large eggs
  • 1 tsp baking powder

  • 8 oz cream cheese (softened)
  • 3 cups powdered sugar (sifted)

Instructions

  2. In a bowl, whisk together flour, baking powder, pumpkin spice blend, and a pinch of salt.
  3. In another bowl, beat softened butter and granulated sugar until fluffy. Add eggs one at a time, mixing well after each addition.
  4. Gently fold in pumpkin puree along with half of the dry mixture. Alternate adding the remaining dry ingredients until smooth, being careful not to overmix.
  5. Pour batter into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Cool for 10 minutes before transferring to wire racks.
  6. For frosting, beat cream cheese until smooth; gradually mix in powdered sugar and vanilla extract until creamy.
