Instructions
- In a large mixing bowl, combine pumpkin puree, egg, and salt. Gradually add flour until a soft dough forms (about 5 minutes).
- Turn the dough onto a floured surface and knead gently for 2-3 minutes until smooth.
- Divide dough into four pieces; roll each into ropes about ¾ inch thick. Cut into 1-inch pieces and create ridges with a fork.
- Bring salted water to a boil. Cook gnocchi in batches until they float to the surface (about 2-3 minutes). Remove with a slotted spoon.
- In a skillet over medium heat, melt butter until golden brown. Add sage leaves and sauté for about 1 minute.
- Add gnocchi to the skillet, gently toss to coat in sauce, and serve hot.
