Description

Ingredients

  • 2 cups all-purpose flour
  • 1 cup pumpkin puree (canned or freshly roasted)
  • 1 large egg
  • 10 fresh sage leaves
  • 4 tbsp unsalted butter
  • ½ tsp salt
  • Freshly cracked pepper to taste

Instructions

  1. In a large mixing bowl, combine pumpkin puree, egg, and salt. Gradually add flour until a soft dough forms (about 5 minutes).
  2. Turn the dough onto a floured surface and knead gently for 2-3 minutes until smooth.
  3. Divide dough into four pieces; roll each into ropes about ¾ inch thick. Cut into 1-inch pieces and create ridges with a fork.
  4. Bring salted water to a boil. Cook gnocchi in batches until they float to the surface (about 2-3 minutes). Remove with a slotted spoon.
  5. In a skillet over medium heat, melt butter until golden brown. Add sage leaves and sauté for about 1 minute.
  6. Add gnocchi to the skillet, gently toss to coat in sauce, and serve hot.
