  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 3 large eggs
  • ½ cup vegetable oil
  • ½ cup buttermilk
  • ½ cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a rectangular baking pan.
  2. In a large bowl, combine the pistachio pudding mix, flour, sugar, baking powder, and chopped pecans; whisk until well mixed.
  3. In another bowl, beat the eggs then add vegetable oil and buttermilk; mix until combined.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  6. Let it cool in the pan for 10 minutes before transferring to a wire rack. Top with whipped cream if desired.
