  • 1 cup unsalted pistachios (140g)
  • 2 cups fresh basil leaves (60g)
  • 2 garlic cloves
  • 2 tbsp freshly squeezed lemon juice
  • 1/3 cup extra virgin olive oil (80ml)
  • 1/2 cup grated Parmesan cheese (50g)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Arrange baguette slices on a baking sheet.
  2. Toast the bread for about 10 minutes until golden brown and crispy.
  3. In a food processor, combine pistachios, basil, garlic, and Parmesan. Pulse until finely chopped.
  4. With the processor running, drizzle in olive oil until smooth yet chunky.
  5. Add lemon juice and season with salt and pepper; blend briefly to combine.
  6. Spread pistachio pesto generously on each toasted baguette slice and arrange on a platter.
