  • 1 cup unsalted pistachios (divided: ½ cup ground, ½ cup chopped)
  • 1 cup heavy cream
  • ½ cup granulated sugar
  • 1 tsp pure vanilla extract
  • 1 tbsp unflavored gelatin powder
  • 2 tbsp cold water

Instructions

  1. Sprinkle gelatin over cold water in a small bowl and let it bloom for 5 minutes.
  2. In a food processor, blend half of the pistachios until finely ground; set the other half aside for garnish.
  3. Whip heavy cream in a mixing bowl until soft peaks form. Gradually add sugar and vanilla extract while continuing to whip until stiff peaks are achieved.
  4. Gently fold in ground pistachios. Warm bloomed gelatin in the microwave until dissolved (about 10 seconds) and mix into the whipped cream mixture.
  5. Pour into serving dishes or one large dish and refrigerate for at least four hours or overnight until set.
  6. Once set, top with chopped pistachios and optional toppings like whipped cream or fresh berries before serving.
