  • 1 cup unsalted pistachios (lightly chopped)
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 1 cup whole milk (or almond milk)
  • 1/2 cup melted butter

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan with parchment paper or grease it lightly.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt until well combined.
  3. In another bowl, mix eggs, milk, and melted butter until smooth.
  4. Pour the wet ingredients into the dry mixture and stir gently until just combined; fold in chopped pistachios.
  5. Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
  6. Allow to cool for 10 minutes in the pan before transferring to a wire rack to cool completely.
