  • 12 jumbo pasta shells
  • 1 lb lean ground beef
  • 1 medium sweet onion, chopped
  • 1 bell pepper (any color), diced
  • 1 cup mushrooms, chopped
  • 2 cups shredded provolone or mozzarella cheese
  • 1 cup low-sodium beef broth
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the jumbo pasta shells according to package instructions until al dente; drain.
  3. In a skillet, heat oil over medium heat and sauté onions, bell peppers, and mushrooms until softened. Add ground beef and Worcestershire sauce; cook until browned. Season with salt and pepper.
  4. Stir in half of the shredded cheese into the meat mixture.
  5. Stuff each cooked shell with the meat mixture and place them upright in a baking dish.
  6. Pour beef broth over the shells and top with remaining cheese. Cover with foil and bake for 25 minutes. Remove foil during the last few minutes to achieve a bubbly top.
