- 2 slices sourdough bread
- 4 oz fresh mozzarella, sliced
- 2 tbsp pesto sauce (preferably homemade)
- 1 tbsp unsalted butter
Instructions
- Slice the bread and mozzarella, and have your pesto ready.
- Spread butter generously on one side of each slice.
- On the non-buttered side of one slice, spread a thick layer of pesto.
- Place mozzarella slices on top of the pesto.
- Top with the second slice of bread (butter side up). Heat a skillet over medium heat and grill the sandwich for 3-4 minutes on each side until golden brown and crispy.
