Description

Pesto Mozzarella Grilled Cheese is a delightful twist on the classic sandwich, combining crispy sourdough bread with gooey fresh mozzarella and vibrant pesto. This easy-to-make dish is perfect for any occasion, whether you’re enjoying a cozy lunch or impressing guests at dinner. Ingredients

  • 2 slices sourdough bread
  • 4 oz fresh mozzarella, sliced
  • 2 tbsp pesto sauce (preferably homemade)
  • 1 tbsp unsalted butter

Instructions

  1. Slice the bread and mozzarella, and have your pesto ready.
  2. Spread butter generously on one side of each slice.
  3. On the non-buttered side of one slice, spread a thick layer of pesto.
  4. Place mozzarella slices on top of the pesto.
  5. Top with the second slice of bread (butter side up). Heat a skillet over medium heat and grill the sandwich for 3-4 minutes on each side until golden brown and crispy.
  6. Cut in half and enjoy!
