  • 2 tbsp olive oil
  • 3 cloves fresh garlic, minced
  • 1 can (28 oz) whole San Marzano tomatoes
  • 1/2 cup vodka
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the penne pasta in salted boiling water until al dente. Drain, reserving 1 cup of pasta water.
  2. In a large skillet over medium heat, add olive oil and sauté minced garlic until fragrant.
  3. Crush the canned tomatoes by hand into the skillet, add vodka, and let simmer for 5 minutes.
  4. Stir in heavy cream and allow it to simmer for another 3 minutes until combined.
  5. Add the cooked penne to the sauce and toss gently, adding reserved pasta water as needed for desired consistency.
