  • 2 tsp salt
  • 1 tsp black pepper
  • 2 tbsp olive oil
  • 2 large onions, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth (low-sodium)
  • 1 tbsp fresh thyme (or 1 tsp dried)
  • 1 tbsp fresh rosemary (or 1 tsp dried)

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Pat the chuck roast dry and season generously with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat; sear the roast for 4–5 minutes on each side until browned.
  4. Transfer the roast to a roasting pan. In the same skillet, sauté onions and garlic until fragrant (3–4 minutes) and add them to the roasting pan.
  5. Pour beef broth over the roast and sprinkle with thyme and rosemary.
  6. Cover tightly with foil or a lid and bake for about 3 hours or until fork-tender.
