  • ¾ cup granulated sugar

  • 2 large eggs
  • 1 cup whole milk
  • ½ cup unsalted butter, melted (cooled)
  • Zest and juice of 2 fresh oranges
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and grease or line a muffin tin.
  2. In a large bowl, whisk together flour, baking powder, sugar, and salt until well combined.
  3. In another bowl, mix eggs, milk, melted butter, orange zest, orange juice, and vanilla extract until creamy.
  4. Gently fold the wet ingredients into the dry mixture until just combined; lumps are okay.
  5. Fill each muffin cup two-thirds full with batter and bake for 18-20 minutes or until golden brown and a toothpick comes out clean.
  6. Allow muffins to cool for 5 minutes before transferring to a wire rack.
